  • 1 lb thick-cut uncured bacon
  • 1 tablespoon balsamic vinegar
  • ½ cup dark brown sugar
  • ½ cup water
  • ⅓ cup strong brewed black coffee
  • 2 extra-large sweet Vidalia onions

Instructions

  1. Slice bacon into 1/2 inch pieces and cook in a large frying pan over medium-high heat until chewy. Remove and drain excess grease.
  2. In the same pan, add sliced onions and cook over medium-low heat until softened. Stir in brown sugar and continue cooking until golden brown.
  3. Return the bacon to the pan, adding black coffee and water. Cook until the mixture thickens (about 30-35 minutes).
  4. Off heat, stir in balsamic vinegar and bourbon until combined.
