  • 1 head cauliflower, chopped into florets
  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • Salt and chives for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook bacon in a large skillet until crispy; remove and set aside.
  3. Boil cauliflower florets for 5 minutes; drain.
  4. In the same skillet, sauté onions and garlic in reserved bacon grease for 3–5 minutes.
  5. Whisk together almond milk and flour; add to skillet and bring to a boil.
  6. Stir in cheeses until smooth; mix in cauliflower until coated.
  7. Transfer to an 8×8-inch baking dish, top with bacon, and bake for 20 minutes.
  8. Garnish with chives before serving.
