  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 2 large eggs

  • 3 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • For Buttercream: 3/4 cup unsalted butter, confectioners' sugar, light brown sugar, cinnamon, and whole milk

Instructions

  1. Preheat oven to 325°F (163°C) and line baking sheets with parchment paper.
  2. In a bowl, mix the granulated sugar and cinnamon for coating; set aside.
  3. In a large bowl, combine softened butter, shortening, granulated sugar, eggs, and vanilla using a stand mixer until creamy.
  4. Gradually add flour, cornstarch, salt, baking powder, and cinnamon; mix until dough forms.
  5. Portion dough into balls (about 2 tablespoons each). Flatten slightly and roll in cinnamon-sugar mixture before placing on baking sheets.
  6. Bake for 12-14 minutes until edges are golden; allow to cool completely.
  7. For buttercream: Beat together the unsalted butter, confectioners' sugar, brown sugar, cinnamon until fluffy; add milk for desired consistency.
  8. Once cookies are cool, frost each cookie generously.
