  • 2 tablespoons lemon zest

  • ¼ cup unsalted butter, melted
  • ¼ cup sunflower oil
  • 1 teaspoon pure vanilla extract
  • ⅓ cup sour cream
  • 1⅔ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup whole milk
  • 1 cup powdered confectioner’s sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon whole milk
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a bowl, mix sugar and lemon zest. Add eggs, whisk until smooth, then mix in melted butter, oil, vanilla extract, and sour cream.
  3. In another bowl, sift together flour, baking powder, baking soda, and salt. Fold dry ingredients into wet mixture gently until combined.
  4. Pour batter into prepared pan and bake for 45–55 minutes or until a skewer comes out clean.
  5. Cool for 10 minutes before transferring to a wire rack.
  6. In a bowl, whisk together powdered sugar, lemon juice, milk, and a pinch of salt until smooth. Adjust the icing thickness as needed.
  7. Once cool, pour icing over the top of the loaf allowing it to drip slightly over edges. Let set before slicing and serving.
