  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 pound Yukon gold potatoes, cut into ½-inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 ¼ pounds sirloin steak, cut into ½-inch cubes
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  2. Once melted, add the potatoes with minced garlic, thyme, oregano, salt, and pepper. Cook for about 10 minutes or until golden brown.
  3. Remove the potatoes from the skillet and set aside.
  4. Increase the heat to medium-high and add the remaining ghee. Sear the steak bites for about 3–4 minutes until they develop a good crust.
  5. Return the potatoes to the pan, stir to combine, and adjust seasoning if necessary.
  6. Garnish with fresh parsley and serve immediately.
