  • 2 large chicken breasts (about 2 pounds total)
  • Kosher salt and coarsely ground pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, minced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1 cup half and half
  • 1/4 cup fresh lemon juice (from 12 lemons)
  • 1 teaspoon lemon pepper seasoning
  • Fresh parsley or basil and lemon slices for garnish

Instructions

  1. Season chicken cutlets with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; cook chicken until golden brown on both sides (5-7 minutes each) at an internal temperature of 165°F.
  3. Remove chicken from skillet; set aside.
  4. In the same skillet, melt butter over medium-low heat. Sauté shallots for 1-2 minutes, add garlic and cook for another minute.
  5. Stir in flour; cook for about 2 minutes. Gradually pour in chicken broth and whisk until smooth.
  6. Add half and half, bring to a boil briefly then reduce heat to simmer until thickened.
  7. Stir in lemon juice and lemon pepper seasoning; return chicken to skillet to warm through.
  8. Serve garnished with herbs and lemon slices.
