  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet over medium-high heat, sear the chicken in olive oil for 4-5 minutes on each side until golden brown. Remove from skillet.
  3. In a medium saucepan, boil chicken broth and salt; stir in rice and simmer covered for 15-18 minutes until tender.
  4. In the same skillet used for the chicken, melt butter and whisk in flour until golden. Gradually add milk and broth while whisking until smooth.
  5. Stir in garlic powder, thyme, cheddar cheese, and Parmesan; cook until thickened.
  6. Return chicken to skillet and spoon sauce over it; cover and simmer on low for 10 minutes.
  7. Serve over prepared rice garnished with fresh parsley.
