  • 250g All-Purpose Flour
  • 50g Icing Sugar
  • 120g Unsalted Butter (cold)
  • 1 large Egg
  • 4 Egg Yolks
  • 100g Caster Sugar
  • 125ml Fresh Lemon Juice
  • 75g Unsalted Butter (room temperature)

Instructions

  1. Prepare the pastry by combining flour, icing sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Mix in the egg until combined. Chill for 30 minutes.
  2. Roll out the dough to about 3mm thick and cut circles to fit tartlet tins. Press into the tins and bake at 180°C (350°F) for about 15 minutes.
  3. For the lemon curd, whisk egg yolks, caster sugar, lemon juice, and zest over low heat until thickened (about 10 minutes). Stir in room temperature butter until smooth.
  4. Fill cooled tartlet shells with lemon curd and chill for at least one hour before serving.
