  • 4 chicken breast cutlets
  • 3 tablespoons olive oil (divided)
  • Zest of 3 lemons
  • 1/2 cup all-purpose flour
  • 1/4 cup panko bread crumbs
  • 2 1/2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon paprika

Instructions

  1. Prepare lemon oil by mixing olive oil and lemon zest in a shallow dish.
  2. In another dish, combine flour, panko, black pepper, garlic powder, salt, parsley, and paprika.
  3. Heat remaining olive oil in a skillet over medium heat.
  4. Dip each chicken cutlet in the lemon oil then coat with the breading mixture.
  5. Cook cutlets for about 5-6 minutes on each side until golden brown.
  6. Add lemon slices during the last few minutes of cooking to caramelize.
  7. Check doneness at an internal temperature of 160°F (71°C).
  8. Let chicken rest before serving.
