  • 5 ancho peppers
  • 5 guajillo peppers
  • 23 chiles de árbol (optional)
  • 1 tablespoon olive oil
  • 1 large white onion
  • 3 large tomatoes
  • 5 cloves garlic
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 4 cups beef stock
  • 3.5 pounds lamb shoulder (or beef shank/chuck roast)

Instructions

  1. Toast ancho and guajillo peppers in a dry pan for 1-2 minutes until slightly darkened. Soak in hot water for 20 minutes until softened.
  2. In the same pan, heat olive oil over medium heat. Cook chopped onion and tomatoes for about 5 minutes; add garlic and cook for an additional minute.
  3. Blend the cooked aromatics with soaked chilies, spices, vinegar, and 1 cup of beef stock until smooth.
  4. Marinate meat with the sauce for at least 2 hours (preferably overnight).
  5. Cook marinated meat in a large pot with roasted tomatoes and remaining beef stock over medium heat for approximately 3 hours or until tender.
  6. Serve hot as a soup or shredded in warm tortillas.
