  • 8 large lemons, washed and sliced
  • 1 cup sugar (granulated or unrefined)
  • 10 sprigs fresh mint
  • 2 sprigs fresh rosemary (plus extra for garnish)
  • ½ vanilla bean (or 2 tsp vanilla extract)
  • 8 cups cold water
  • Ice for serving

Instructions

  1. In a mixing bowl with a fine-mesh strainer set over it, combine lemon slices, sugar, fresh mint, rosemary, and vanilla seeds. Gently massage until lemons release juice.
  2. Cover the mixture and refrigerate for at least 3–4 hours or overnight for more flavor.
  3. Press the lemon mixture through the strainer to extract juice; discard solids.
  4. Transfer juice to a pitcher, add cold water, and stir well.
  5. Serve over ice and garnish with additional mint or rosemary sprigs.
