  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon (or more, as needed) purple food coloring
  • 1 pound cream cheese, softened
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together oil, buttermilk, eggs, food coloring, vinegar, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients; mix until blended.
  5. Divide batter between prepared pans; bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes; transfer to wire racks to cool completely.
  7. For frosting: Beat cream cheese and butter until smooth; gradually add confectioners’ sugar until fluffy.
  8. Frost cooled cake layers with cream cheese frosting.
