  • 4 cups shredded beef birria
  • 2 cups birria broth (consomé)
  • 16 thick corn tortillas
  • 1 pound Oaxaca cheese or Monterey Jack cheese, shredded
  • Optional toppings: diced red onions, chopped cilantro, lime wedges

Instructions

  1. Prepare the beef birria using your favorite method and keep it warm.
  2. Preheat a large skillet over medium-high heat and lightly coat with cooking spray or oil.
  3. Dip each tortilla in warm consomé before placing it on the skillet; cook for about 30 seconds per side until slightly softened.
  4. On one half of each tortilla, add shredded cheese and about ¼ cup of shredded birria. Fold to form a taco.
  5. Cook until the cheese melts and the tortilla is crisp, approximately 30-60 seconds more.
  6. Serve hot with optional toppings and warm consomé for dipping.
