  • 1 1/2 cups all-purpose flour, sifted
  • 1/2 teaspoon kosher salt
  • 1/3 cup seedless raspberry jam
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, cream together the softened cream cheese and butter until smooth. Gradually add the sifted flour and salt until a dough forms.
  2. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Flour a surface and roll out the chilled dough into a rectangle (10×30 inches). Spread raspberry jam over the surface, leaving a border.
  4. Roll the dough into a log from the jam-covered edge and seal the unjammed edge. Chill for another 15 minutes.
  5. Preheat oven to 375°F (190°C). Slice the log into 1/4-inch thick cookies.
  6. Arrange on parchment-lined baking sheets and bake for 17-20 minutes until edges are lightly golden.
  7. Cool on a wire rack and dust with powdered sugar before serving.
