  • 4 (6 oz) salmon fillets
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh dill
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Pat salmon fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side up for about 5 minutes until golden brown. Flip and cook an additional 5 minutes until skin is crispy. Remove from skillet.
  3. In the same skillet, reduce heat to medium-low, add butter, and sauté garlic for about 30 seconds. Stir in flour to make a roux for 1 minute.
  4. Gradually whisk in heavy cream, cooking until thickened (3–4 minutes). Add lemon zest, juice, and dill; adjust seasoning.
  5. Return salmon to skillet, spoon sauce over it, and simmer gently for 2 minutes until warmed through.
