  • 3/4 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped dill
  • 1/4 cup chopped parsley
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 3 green onions (sliced)
  • Kosher salt and black pepper

Instructions

  1. Preheat oven to 425°F. Grease a baking sheet with olive oil.
  2. Boil salted water in a large pot and cook the potatoes until fork-tender (15-20 minutes). Drain and cool for 5 minutes.
  3. Smash the cooled potatoes on the baking sheet until about ½-inch thick. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 25-30 minutes until crispy. Let cool for 10 minutes.
  5. Whisk together the Greek yogurt, mayonnaise, dill, parsley, shallot, garlic, Dijon mustard, lemon juice, salt, and pepper in a bowl.
  6. Combine smashed potatoes with the dressing and mix in cucumber, celery, green onions, and dill pickles gently until well-coated. Garnish with feta cheese if desired.
