  1. In a large bowl, mix water, sourdough starter, and salt until combined. Gradually add flour and mix until no dry flour remains. Cover and rest for 30 minutes.
  2. Perform four sets of stretch and folds over the next hour. Cover between sets to prevent drying.
  3. Allow the dough to rise at room temperature for 3–4 hours or until nearly doubled.
  4. Shape the dough into a tight ball and place it seam-side up in a floured basket. Let it proof for another 2 hours.
  5. Preheat your oven to 460°F (238°C) with a Dutch oven inside during the last hour of proofing.
  6. Carefully transfer the dough onto parchment paper, score the top, and bake covered for 30 minutes. Uncover and bake for an additional 10 minutes until golden brown.
  7. Cool on a rack before slicing.
