  • ½ cup apple cider vinegar

  • 2 teaspoons minced garlic
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dry mustard powder
  • ½ cup brown sugar
  • 1 teaspoon cooking oil or butter (optional)

Instructions

  1. Peel and thinly slice the sweet onions to yield about 6 cups.
  2. In a heavy-bottomed pot, heat olive oil over medium heat and add the sliced onions, apple juice, vinegar, garlic, salt, pepper, mustard powder, and red pepper flakes. Cook until the onions soften (5-7 minutes).
