  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 1/3 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • 3/4 cup plain Greek yogurt
  • Zest of 1 lemon
  • 3 tablespoons butter, softened (not melted)
  • 1 1/2 cups powdered sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper and grease lightly.
  2. In one bowl, whisk together flour, pudding mix, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, butter, extracts, lemon juice, oil, and yogurt until well combined.
  4. Gradually add dry ingredients to wet mixture; mix until just combined. Fold in lemon zest.
  5. Pour batter into prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
