  • 1.5 cups all-purpose flour
  • 1 cup unsalted butter
  • 1 large egg
  • 3/4 cup granulated sugar
  • 2 tsp lemon juice
  • 4 tbsp cornstarch
  • 1/4 tsp almond extract
  • Large pinch kosher salt
  • 1/2 cup confectioners' sugar
  • 1.5 cups whole wheat pastry flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg, whisked slightly chilled
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the cherry filling by mixing tart cherries with sugar, lemon juice, cornstarch, almond extract, and salt.
  3. Beat cream cheese and confectioners’ sugar until smooth; mix in an egg.
  4. Combine flours, sugar, baking powder, and salt; cut in butter until crumbly. Reserve some for topping.
  5. Press remaining mixture into a baking pan; layer cheesecake filling, cherry filling, then reserved crumbs.
  6. Bake for 30-35 minutes until golden brown; cool before cutting into bars.
